The Raw Bar is central to the Nikkei dining concept, serving guests from a menu based on the chef's selection of ingredients from the day's catch.

The name has its roots far back, over 2000 years ago, when freediving women hand-picked oysters and pearls along the Japanese coast. The technique was recognized and the divers were given the name “AMA”, which means “sea women” in Japanese. The food concept AMA is an “Asian Fusion with a Nordic Touch” and the flavors take you on an exciting culinary journey.
